Vegan Hummingbird Bread
The tropical flavors of bananas, pineapple, and pecans come together in vegan hummingbird bread to make a tasty and moist treat. You can eat it for breakfast or as a snack with coffee or tea.
Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped pecans
- 1/2 cup coconut oil, melted
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions:
Warm the oven up to 175F 350C
Prepare a loaf pan by greasing it
Mash bananas, crush pineapple, chop pecans, melt coconut oil, add coconut sugar, and vanilla extract to a large bowl
Mix well
Sift the flour, baking powder, baking soda, cinnamon, and salt together in a different bowl
Slowly add the dry ingredients to the wet ones and mix them together until they are just barely mixed
Be careful not to mix too much
As soon as the loaf pan is ready, pour the batter into it and use a spatula to smooth the top
Put it in the oven and bake for 45 to 50 minutes, or until a toothpick stuck in the middle comes out clean
Take the pan out of the oven and let it cool for 10 minutes before moving it to a wire rack to cool all the way through
