Protein-Packed Bean Quinoa Salad
This bean and quinoa salad is full of protein and good for you. It's a quick and easy way to make lunch or dinner. It has a lot of flavor and texture because it has quinoa, black beans, kidney beans, and lots of fresh vegetables. The sour dressing makes the whole thing taste even better.
Ingredients:
- 1 cup cooked quinoa
- 1 cup cooked black beans
- 1 cup cooked kidney beans
- 1 cup diced bell pepper
- 1 cup diced cucumber
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
Black beans, kidney beans, bell pepper, cucumber, red onion, cilantro, and parsley should all be mixed together in a large bowl
To make the dressing, mix the apple cider vinegar, maple syrup, cumin, salt, and pepper with a whisk in a small bowl
Add the dressing to the salad and mix it all together until it's well covered
Serve right away or put in the fridge to enjoy later
