Chocolate Chip Soft Gingerbread Cookies



These Chocolate Chip Soft Gingerbread Cookies are a delightful twist on classic gingerbread cookies. The addition of chocolate chips adds a rich and indulgent touch to the warm and cozy flavors of traditional gingerbread.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips

Instructions:

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy

Beat in the molasses, egg, and vanilla extract until well combined

In a separate bowl, whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Stir in the semisweet chocolate chips

Cover the dough and refrigerate for at least 1 hour, or until firm

Preheat the oven to 350F 175C and line baking sheets with parchment paper

Scoop tablespoon-sized portions of dough and roll them into balls

Place them on the prepared baking sheets, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft

Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely

Once cooled, enjoy these deliciously soft gingerbread cookies with a glass of milk or your favorite hot beverage!
