No-Churn Vegan Pistachio Ice Cream



This pistachio ice cream is sweet, creamy, and nutty. It's also easy to make, and you don't even need an ice cream maker. This is a great treat for hot summer days!

Ingredients:

  • 1 can 13
  • 5 oz full-fat coconut milk
  • 1/2 cup raw cashews, soaked overnight and drained
  • 1/2 cup shelled pistachios, plus extra for garnish
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

In a blender, combine the coconut milk, soaked cashews, pistachios, maple syrup, vanilla extract, and salt

Blend until smooth and creamy

Pour the mixture into a loaf pan or a container, and cover it with plastic wrap

Place it in the freezer for at least 4 hours, or until firm

Remove from the freezer, let it sit for a few minutes to soften slightly, and then scoop into bowls

Garnish with chopped pistachios before serving
