Strawberry Lemon Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/4 cup fresh strawberries, pureed
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- For the Strawberry Lemon Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup fresh strawberries, pureed
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- Red food coloring optional
- Strawberry and lemon slices for garnish optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, mixing well after each addition
Stir in the fresh strawberry puree, lemon juice, and lemon zest
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients
Mix until just combined
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely
For the Strawberry Lemon Frosting: In a mixing bowl, beat the softened butter until creamy and smooth
Add the powdered sugar, fresh strawberry puree, lemon juice, and lemon zest
If desired, add a few drops of red food coloring for a pink color
Beat until the frosting is fluffy and well combined
Once the cupcakes are completely cooled, pipe or spread the strawberry lemon frosting onto each cupcake
Garnish with strawberry and lemon slices if desired
