Vegan Butternut Squash Soup
This vegan butternut squash soup is creamy, comforting, and perfect for chilly days. Packed with flavor from aromatic spices, it's a healthy and satisfying dish for any occasion.
Ingredients:
- 1 medium butternut squash, peeled, seeded, and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add onion, garlic, carrot, and celery
Saut until softened, about 5 minutes
Add cubed butternut squash, vegetable broth, cumin, cinnamon, nutmeg, salt, and pepper
Bring to a boil, then reduce heat and simmer until squash is tender, about 20-25 minutes
Using an immersion blender, blend soup until smooth
Alternatively, transfer soup to a blender in batches and blend until smooth
Taste and adjust seasoning if needed
Serve hot, garnished with a sprinkle of ground cinnamon or a dollop of coconut cream if desired
